ABSTRACT
Penelitian ini menggunakan air terozonasi untuk menjaga kualitas ikan tuna. Tujuan dari penelitian ini adalah mengevaluasi pengaruh durasi kontak dan penggantian air terozonasi terhadap kualitas ikan tuna yang diukur berdasarkan parameter jumlah Total Bakteri Mesofil Aerobik TBMA, pH, kadar air, dan kandungan protein. Durasi kontak 40, 80, dan 120 menit dapat mendeaktivasi TBMA berturut-turut sebesar 4,94, 60,99, dan 65,43. Sedangkan, penggantian air setiap 60 dan 40 menit selama 120 menit dapat mendeaktivasi lebih banyak TBMA, yaitu sebesar 82,59 dan 89,38. Durasi kontak 120 menit dapat menurunkan pH sebesar 0,12, menghasilkan kadar air 0,63 lebih rendah dari blanko, dan menyebabkan penurunan kandungan protein sebanyak 0,80. Penggantian air setiap 40 menit selama 120 menit dapat menurunkan pH sebesar 0,08, menghasilkan kadar air 1,44 lebih rendah dari blanko, dan menyebabkan penurunan kandungan protein sebanyak 2,20.
ABSTRACT
This study uses ozonated water to maintain the quality of tuna. The objective of this study is to evaluate the effect of exposure time and water replacement of the ozonated water on the quality of tuna, measured by the parameters of Total Mesophyll Aerobic Bacteria TMAB, pH, water content, and protein content. Exposure time of 40, 80, and 120 minutes can deactivate the TMAB by 4.94, 60.99, and 65.43, respectively. Meanwhile, water replacement every 60 and 40 minutes within 120 minutes can deactivate more TMAB, which values 82.59 and 89.38. Exposure time of 120 minutes can also decrease the pH by 0.12, lower the water content by 0.63 , and decrease the protein content by 0.80. Water replacement every 40 minutes within 120 minutes can decrease the pH by 0.08, lower the water content by 1.44 , and decrease the protein content by 2.20.

Penelitian ini meninjau pengaruh durasi kontak 40, 80, dan 120 menit, suhu kontak 3, 26, dan 37 ?C, dan konsentrasi ozon 0,21 dan 0,38 mg/l pada pemanfaatan air terozonasi dalam upaya mempertahankan kualitas daging ayam. Parameter mutu yang diamati adalah perubahan jumlah total bakteri mesofil aerobik TBMA, bakteri Escherichia coli, pH, kadar air, dan kadar protein. Hasil menunjukkan bahwa semakin lama durasi kontak dan semakin rendah suhu kontak, maka semakin rendah laju penurunan kualitas daging ayam. Air terozonasi dengan konsentrasi ozon 0,38 mg/L yang dikontakkan dengan daging ayam fillet selama 120 menit pada suhu 3?C mampu mereduksi bakteri mesofilik aerobik sebesar 1 unit log cfu/g. Konsentrasi ozon 0,21 dan 0,38 mampu mendisinfeksi total bakteri mesofilik aerobik sejumlah 0,42 dan 0,89 unit log cfu/g. Tidak ada pengaruh yang signifikan terhadap pH dan kadar air daging ayam, namun kadar protein turun 1.
ABSTRACT
This research studied the effect of exposure time 40, 80, and 120 min, temperature contact 3, 26, and 37 C, and ozone concentration 0.21 and 0.38 mg l in the optimization of ozonated in effort maintain the quality of chicken meat. The observed quality parameters were total number of aerobic mesophyll bacteria, Escherichia coli, pH, water content, and protein content. The results show that longer exposure time and lower temperature could lower the rate of decreasing quality in chicken meat. Ozonated water with 0.38 mg l of ozone concentration is contacted with chicken fillet for 120 minutes at 3 C, it reduced aerobic mesophilic bacteria by 1 unit log cfu g. The ozone concentrations of 0.21 and 0.38 were able to disinfect total aerobic mesophilic bacteria of 0.42 and 0.89 log cfu g respectively. There was no significant effect on pH and chicken water content, but protein content decreased by 1.

ABSTRAK
Air terozonasi merupakan salah satu solusi untuk mempertahankan kualitas tahu. Ozon memiliki sifat antimikroba yang tinggi dan sudah diakui keamanannya jika dikontakkan dengan produk pangan. Tujuan dari penelitian ini adalah untuk melihat pengaruh durasi kontak serta penggantian air terozonasi dalam mempertahankan mutu tahu. Parameter mutu yang diamati adalah perubahan jumlah total bakteri mesofil aerobik TBMA , pH, kadar air, dan kadar protein. Tahu dikontakkan dengan air terozonasi 0,32 mg O3/L selama 40, 80, dan 120 menit serta dilakukan penggantian air terozonasi 0,32 mg O3/L sebanyak 1 dan 2 kali selama 120 menit. Hasil menunjukkan bahwa semakin lama durasi kontak, semakin rendah laju penurunan mutu tahu. Durasi kontak selama 120 menit mampu mendesinfeksi TBMA sebanyak 51 dan menekan laju perubahan pH, kadar air, dan kadar protein. Selain itu, penggantian air terozonasi yang semakin sering juga dapat menekan laju perubahan mutu tahu. Pada 2 kali penggantian, jumlah TBMA terdesinfeksi mencapai 96 . Penelitian ini menunjukkan bahwa perlakuan dengan 2 kali penggantian air terozonasi mampu mempertahankan mutu tahu paling baik dibanding perlakuan lainnya.
ABSTRACT
Ozonated water is one of many solutions to preserve the quality of tofu. Ozone is an anti microbial agent and already recognized as safe to be contacted with food. The aim of this research is to see the effect of exposure time and replacement of ozonated water in preserving tofu rsquo s quality. The quality parameters that are observed in this research are total mesofilic aerobic bacteria TMBA , pH, water content, and protein level. The tofu is exposed to ozonated water 0,32 mg O3 L for 40, 80, and 120 minutes. For water replacement, tofu is exposed to ozonated water 0,32 mg O3 L for 120 minutes and the water replacement occurred once and twice unreplaced water is observed as well . 120 minutes exposure is able to disinfect 51 TMBA and suppress the rate of change in pH, water content, and protein level in tofu. Moreover, water replacement every 40 minutes is able to disinfect 96 TMBA and suppress the rate of change in pH, water content, and protein level as well. This research shows that replacing ozonated water every 40 minutes is the most effective treatment among others in preserving the quality of tofu.

ABSTRACT
Tahu merupakan bahan pangan yang memiliki kadar air tinggi dan mudah rusak. Salah satu upaya dalam penjagaan kualitas tahu yaitu menggunakan air terozonasi. Ozon memiliki sifat antimikroba yang tinggi dan sudah diakui keamanannya jika dikontakkan dengan produk pangan. Penelitian ini bertjuan untuk mempertahankan kualitas tahu menggunakan air terozonasi dengan melihat pengaruh dosis ozon, serta durasi dan suhu kontak air terozonasi. Tahu dikontakkan dengan air terozonasi dalam durasi kontak 40,80,120 menit dan suhu kontak pada suhu kulkas 8oC , suhu inkubator 37oC, dan suhu ruang 25oC dan disimpan dalam suhu kulkas 8oC selama 7 hari. Kemudian variasi dosis ozon yang digunakan yaitu 0,28 mg/L dan 0,33 mg/L. Hasil menunjukkan bahwa semakin besar dosis ozon, semakin lama durasi kontak dan semakin rendah suhu pengontakkan, maka akan semakin rendah laju penurunan mutu tahu. Durasi Kontak 120 menit dapat mendesinfeksi TBMA hingga 4,5 x 106 CFU/mL, dapat mendesinfeksi E. coli dan menekan laju perubahan pH, kadar air, dan kadar protein. Suhu kontak 8oC dengan durasi kontak 120 menit dapat medesinfeksi TBMA hingga 7 x 106 CFU/mL. Selain itu dengan dosis ozon lebih tinggi, dapat mendesinfeksi TBMA lebih besar hingga 9 x 106 CFU/mL. Penelitian ini menunjukkan bahwa perlakuan dengan suhu kontak 8oC air terozonasi terhadap tahu mampu mempertahankan mutu tahu paling baik dibanding perlakuan lainnya.
ABSTRACT
Tofu is a kind of food that has high water content and easily damaged. One of the efforts in maintain the quality of tofu is using the ozonated water. Ozone has high antimicrobial properties and has been recognized safety when contacted with food products. This study aims to maintain the quality of tofu using aquatic water by looking at the effect of the dose of ozone, as well as the duration and temperature of the contacts of the terozonated water. This study uses ozonated water to maintain the quality of food by looking at the effect of ozone dosage, as well as the duration and temperature of contacts of the ozonated water. The tofu was contacted with ozonated water in contact duration of 40,80,120 min and the contact temperature at chiller temperature 8oC , incubator temperature 37oC, and room temperature 25oC and stored in refrigerator temperature 8oC for 7 days. Then the variation of ozone dosage used was 0.28 mg L and 0.33 mg L. The results show that the larger the dose of ozone, the longer the contact duration and the lower the contacting temperature, the lower the rate of degradation of the tofu. 120 minutes contact duration can infect TBMA up to 4.5 x 106 CFU mL, can disinfect E. coli and suppress pH change rate, moisture content, and protein content. The contact temperature of 8oC with contact duration of 120 minutes can be TBMA medsinfection up to 7 x 106 CFU mL. In addition, with higher ozone doses, it can disinfect larger TBMA up to 9 x 106 CFU mL. The present study showed that treatment with 8oC contact temperature of the ozonated water to the tofu was able to maintain the best know quality compared to other treatments.
