Abstrak :
Penelitian ini bertujuan untuk mengetahui peran harga, pendapatan, dan selera terhadap konsumsi pangan lokal di Provinsi Papua. Penelitian ini menggunakan data Survei Sosial Ekonomi Nasional (SUSENAS) tahun 2019 dari Badan Pusat Statistik. Metode yang digunakan adalah Quadratic Almost Ideal Demand System (QUAIDS) dengan estimator Iterated Linear Least Square (ILLS). Hasilnya adalah peningkatan pendapatan sangat berdampak pada peningkatan konsumsi pangan lokal di daerah kota dan pendapatan tinggi dibandingkan di daerah desa dan pendapatan rendah. Peran harga pangan lokal sangat penting karena bersifat elastis yaitu ketika harga pangan lokal meningkat akan mengurangi proporsi konsumsi pangan lokal meskipun di kompensasi oleh pendapatan. ......The objective of this study is to determine the role of price, income, and tastes on local food consumption in Papua Province. This study used the 2019 National Socio-Economic Survey (SUSENAS). The method used is Quadratic Almost Ideal Demand System (QUAIDS) with Iterated Linear Least Square (ILLS) estimator. The results are the increase in income affects the local food consumption in urban areas with high incomes as opposed to rural areas with low incomes. The role of local food prices is very important because consumption local food will reduce if the price increase even though it is compensated by income.

Local Food Experience merupakan salah satu produk yang ditawarkan dalam industri pariwisata. Makanan dilihat sebagai salah satu refleksi budaya lokal, dan pengalaman tersebut dapat menciptakan tourist satisfaction, terutama bagi wisatawan yang baru pertama kali memakan makanan tersebut dalam sebuah perjalanan wisata. Penelitian ini dilakukan dengan tujuan untuk menjelaskan pengaruh local food experience terhadap tourist satisfaction pada wisatawan mancanegara di Kota Yogyakarta. Penelitian ini menggunakan pendekatan kuantitatif, jenis penelitian eksplanatif, metode survey, dengan menyebarkan kuesioner ke 100 responden dengan teknik pengambilan sampel non-probability sampling. Hasil penelitian menunjukan bahwa terdapat pengaruh antara local food experience dengan tourist satisfaction. Penelitian ini menunjukan bahwa pengalaman terkait makanan lokal telah menciptakan kepuasan wisatawan yang baik pada wisatawan mancanegara di Kota Yogyakarta.
Local food experience is a product that is being offered in tourism industry. Local food is seen as a reflection of local culture, and the experience may results in tourist satisfaction, especially for tourist who eat local food for the first time during a tourism purpose trip. This research was conducted with the aim to explain the influence of local food experience towards tourist satisfaction among international tourists in Yogyakarta City. This study was conducted using quantitative research approach with explanative type of research, survey method, with the number of survey respondents is 100 to the technique of taking samples of non probability sampling. The results shows that local food experience had created positive tourist satisfaction among international tourist in Yogyakarta City.

Global financial crisis and climate changes have affected food security in a move vulnerable situation. Food security pillars, in this respect should be strengthened. The food security pillar should not rely only on quantitative approaches, but also on other pillars in a wider food spectrum. One of the feasible ways to enhance food security is to develop food diversification based on local food commodities. This paper is aimed to assess some vulnerable points of national food security, the significant of the diversification to enhance food availability and its prospect as one of the pillars to develop steady food security in Indonesia.

Food is the fundamental right of every human being. Communities or nations that are not satisfied with food sufficiency will have the potential to cause economic instability and even to bring down a government. Dependence on rice as a staple food can threaten economic and political stability when food is not adequately covered. One alternative that can be done to avoid the threat is to switch to other food sources of other carbohydrates that grow in Indonesia, including sweet potato, cassava, arrowroot, and ganyong. However, the local food variety is still considered second class food, due to the still strong food culture based on rice from rice. Therefore, it needs a local food campaign in the internet media. The Internet is now growing into a medium that is able to reach all circles quickly and precisely. This descriptive study used secondary data such as books and journals related to state defense and food security. The results of the study showed that the use of the internet as a medium of local food campaign to the community has not been implemented maximally, both implemented by the government and non-government. In line with the rapid development of the internet and the importance of defending the country in all aspects, local food campaigns through internet media require the participation of all stakeholders.

Dibandingkan dengan kompetitor langsung dan tidak langsung, Ayam Ulbid menawarkan ukuran saji yang lebih beragam (250 gr, 500 gr, 1 kg, bulk order). Dibandingkan dengan kompetitor langsung, Ayam Ulbid menawarkan varian rasa yang lebih beragam dan menjangkau berbagai selera (western, nusantara, dan oriental). Dibandingkan dengan kompetitor langsung dan tidak langsung, Ayam Ulbid menerima pesanan jumlah besar (bulk order) melalui sistem pre-order. Dibandingkan dengan kompetitor langsung dan tidak langsung, harga produk lebih murah dengan jumlah sajian yang lebih banyak. Local cuisine has become one of the main attractions for tourists to visit a destination. Local cuisine shifts tourist behavior towards Indonesian local cuisine, to the extent of repurchasing. In order to find out the intention to repurchase, satisfaction, perceived quality, and perception are analyzed. To this date, very few researches examined Indonesian cuisine in relation with the tourist behavior. Currently, cuisine tourism has become a trend, increasing the amount of tourist visiting Indonesia. The aspects of Tourist Satisfaction, Tourist Perception, Repurchase Intention, Perceived Quality, Consumer Behavior Local Cuisine, and Tourist Behavior are among tourists preference for local cuisines. This research had 148 participants taking part on the online survey that was conducted in Indonesia. Data were collected both online and offline in Yogyakarta. The respondents are tourist who have visited Indonesia in the past 12 months and have tried Indonesian food during their visit. The data were then analyzed using structural modeling equation, specifically using Partial Least Square method (Smart PLS 3.2.8). The results showed that Tourist Behavior (willingness to recommend Indonesian food, revisit Indonesia and the impression on Indonesia food) was influenced by Repurchase Intention. Repurchase Intention was influenced directly by Tourist Satisfaction on Local Food and Tourist Perception. While Perceived Quality of Local Food influenced Tourist Repurchase Intention through Tourist Perception.
Kuliner lokal merupakan salah satu daya tarik utama bagi wisatawan untuk mengunjungi suatu tempat wisata. Kuliner lokal mengubah Tourist Behavior terhadap kuliner lokal Indonesia dan melakukan pembelian lagi. Untuk mengetahui keinginan mereka untuk membeli lagi, maka dilakukan analisis terhadap kepuasan, kualitas yang dirasakan, dan persepsinya. Namun, masih sedikit penelitian yang meneliti hubungan makanan Indonesia terhadap perilaku wisatawan. Saat ini, wisata kuliner telah menjadi sebuah tren dan jumlah wisatawan yang berkunjung ke Indonesia semakin meningkat. Aspek Tourist Satisfaction, Tourist Perception, Repurchase Intention, Perceived Quality, Consumer Behavior Local Food, Tourist Behavior menjadi seleksi wisatawan terhadap kuliner lokal. Selanjutnya, penelitian ini memiliki 148 peserta untuk survei online yang dilakukan di Indonesia. Data dikumpulkan secara online dan offline di Yogyakarta. Responden adalah turis yang telah mengujungi Indonesia dalam 12 bulan terakhir dan mencoba makanan Indoesia selama kunjungan mereka. Data kemudian dianalisis menggunakan persamaan pemodelan struktural, khususnya metode partial least square (Smart PLS 3.2.8). Hasil penelitian menunjukkan bahwa Tourist Behaviour (kesediaan untuk merekomendasikan makanan Indonesia, mengunjungi kembali Indonesia dan kesan pada makanan Indonesia) dipengaruhi oleh Tourist Repurchase Intention. Tourist Repurchase Intention dipengaruhi langsung oleh Tourist Satisfaction on Local food dan Tourist Perception. Sedangkan Perceived Quality of Local food Tourist Repurchase Intention melalui Tourist Perception.

Studi yang meneliti hubungan antara harga minyak dunia dan harga komoditi pangan di pasar domestik masih jarang ditemukan. Dengan membuat Model Panel Data dari 34 provinsi di Indonesia pada tahun 2010-2017, studi ini bertujuan untuk menginvestigasi pengaruh perubahan harga minyak dunia terhadap beberapa harga komoditi pangan lokal (kedelai,import, kedelai lokal, beras lokal, dan jagung lokal). Penelitian sebelumnya menemukan bahwa harga komoditi pangan lokal di beberapa negara tidak dipengaruhi oleh harga minyak dunia; akan tetapi, penelitian ini, dengan mengendalikan faktor – faktor lainnya yang dapat mempengaruhi harga pangan lokal, menemukan hasil yang berbeda. Hasil dari studi ini mengindikasikan bahwa harga minyak dunia dapat mempengaruhi harga pangan lokal di Indonesia melalui tingginya biaya pengiriman pada aktivitas impor. Selain itu, harga komoditi pangan dunia juga terbukti dapat mempengaruhi harga seluruh komoditi pangan lokal yang diteliti, yang mengimplikasikan bahwa harga komoditi pangan di Indonesia dipengaruhi oleh kondisi pasar internasional. Hasil dari studi ini memberikan masukan bagi pembuat kebijakan di Indonesia untuk mempertimbangkan perubahan harga minyak dunia dan harga komoditi global dalam menstabilkan harga komoditi lokal di Indonesia, terutama komoditi yang diimpor.

 


Globally, studies examining the nexus between global crude oil price and food commodity prices in domestic markets are scant. Employing panel data model of 34 provinces in Indonesia from 2010 - 2017, this study investigates the impact of global crude oil’s price change on some local food commodity prices (imported soybean, local soybean, local rice, and local maize). Previous studies found that local food commodity prices in some countries were not affected by global crude oil prices; however, this study, by controlling other factors which could affect local commodity prices, finds different results. This study’s findings indicate that global crude oil price could affect local commodity prices in Indonesia due to higher shipping cost in import activity. In addition, global commodity prices are also proved to affect all commodities examined in this study which implies that local food commodity prices in Indonesia are influenced by international market. The results of this study provide input to policymakers in Indonesia to consider the movement of global crude oil price and global commodity prices in stabilizing local food commodity prices in Indonesia, especially the imported commodities.

Tesis ini membahas tentang pengembangan UMKM Olahan Pangan Lokal. Penelitian ini menggunakan pendekatan kualitatif dengan jenis penelitian deskriptif. Hasil penelitian ini menujukkan bahwa gerakan ODNR telah mendorong munculnya UMKM yang bergerak di bidang kuliner dan kemudian menyediakan menu pangan lokal non beras dan non terigu. Peran UMKM olahan pangan lokal dalam gerakan ODNR adalah memproduksi, menyuplai, mendistribusikan, memasarkan pangan lokal, melakukan inovasi, mensosialisasikan ODNR, memunculkan UMKM baru dan membuka lapangan kerja. Hal-hal yang mendukung perkembangan UMKM pangan lokal adalah tempat usaha, peralatan, modal, tenaga kerja, keterampilan, bahan baku, dan gerakan ODNR itu sendiri, sedangkan faktor penghambatnya adalah pergantian pegawai dan pengaturan waktu kerja, kurangnya kreatifitas, kurangnya pengetahuan dan kelangkaan bahan baku tertentu. ......This thesis reveals the development of micro, small and medium local food entreprise. Furthermore, this descriptive research uses a qualitative approach. The result of this research show that ODNR action has encouraged the appearance of UMKM in a culinary sector and it also provided local food - non rice and non wheat. The roles of UMKM in a ODNR action is producing, supplying, distributing, marketing local food, conducting inovation, socializing ODNR action, creating new UMKM and job vacancies. Things supporting the development of UMKM are place, equipment, capital, human resources, skills, raw materials, and ODNR action itself. On the other hand, there are some factor that inhibit its development, such as the alteration of human resources and setting of working time, lack of creativity, lack of knowledge and scarcity of raw materials.

Isu food desert (kesulitan akses makanan sehat dengan harga terjangkau) merupakan fenomena yang sudah lama melanda sejumlah wilayah di Amerika Serikat. Uniknya, isu ini memiliki keterkaitan erat dengan rasisme karena mayoritas penduduk yang tinggal di wilayah food desert merupakan penduduk kulit hitam, seperti di wilayah selatan kota Memphis yang pada tahun 2019, dijuluki The Hunger Capital of America.  Artikel ini bertujuan untuk untuk memahami perancangan dan penerapan solusi terhadap isu food desert di wilayah selatan kota Memphis menggunakan lensa konsep local food network dan just sustainability. Penelitian ini juga bertujuan untuk menganalisis bagaimana kesadaran ras dan kelas diintegrasikan dalam solusi yang dirumuskan komunitas lokal, mengingat mayoritas penduduk yang tinggal di wilayah food desert adalah penduduk kulit hitam dalam golongan kelas menengah ke bawah. Terkait dengan aspek berkelanjutan dari konsep just sustainability, penelitian ini juga akan mengevaluasi bagaimana program seperti farmers market dan dapur komunitas yang berupa praktik non-komersial, dapat menjadi solusi isu food desert yang efektif dan dapat dipertahankan dalam jangka panjang. ......The issue of food desert (difficulty in accessing healthy food at affordable prices) is a phenomenon that has long plagued a number of regions in the United States. Uniquely, this issue has a close relationship with racism because the majority of the population living in food desert areas are its black population, such as the area of South Memphis, which in 2019, was nicknamed “The Hunger Capital of America”. This article aims to understand the design and implementation of solutions to the food desert issue in South Memphis using the lens of local food network and just sustainability concept. This study also aims to analyze how racial and class awareness are integrated into solutions formulated by local communities, considering that the majority of the population living in the food desert area are black and in the lower middle-class group. Related to the sustainable aspect of the just sustainability concept, this study will also evaluate how initiatives such as farmer's market and community kitchens in the form of non-commercial practices, can be an effective and sustainable solution to the food desert issue in the long term.
