"ABSTRACT
Worldwide it is estimated that 1400 million episodes of diarrhea occur annually in children under the age of 5 years. In 1990, over 3 million of such children died. Up to 70% of diarrhea episodes could be due to pathogens transmitted through food (Motarjemi, et. al., 1993). A prospective cohort study was conducted in Kelurahan Kapuk, West Jakarta. The purpose was to identify relationship between food contamination, diarrhea, and nutritional status of children age 6 months to 2 years.
Food samples such as drinking water (DW), rice mixture (RH), and milk formula (ME) consumed by 99 children were tested for contamination of Escherichia coli, total coliform, and total aerobic bacteria (APO). Diarrhea occurrence during 2-weekperiod were noted along with measurements of weight and height.
The results were as follow: 6% DW, 18% RM, and 7% MF were contaminated by faecal coliform; 29% DW, 26% RM, and 46% MF had total coliform below the recommenced guideline values of Health Department and WHO (Depkes, RI 1990, Depkes, RI 1991 & WHO, 1985); as well as 74% DW, 43% RM, and 12% MF for APC. However, no statistical significant relationship was found between food contamination and diarrhea.
Seventeen children suffered diarrhea during the 2-week study period; ranging from 1-6 days with average of 3 days. No persistent diarrhea was found. About half (53%) of the diarrhea children had mild dehydration problem.
Mean x-scores of weight-for-height for the diarrhea children at food sampling and 7 day afterward were (-1.39±1.03) and (-0.62+2 90). Six children were wasted at food sampling day, but only 5 were still wasted at 7th day visit. No statistical significant relationship was found between diarrhea and nutritional status after the disease."

"Makanan dengan kandungan zat gizinya sangat dibutuhkan oleh mahluk hidup termasuk manusia untuk tumbuh dan berkembang biak. Sebaliknya melalui makanan dapat juga dipindahkan beberapa penyakit yang ditularkan melalui makanan seperti diare dan keracunan makanan. Tingkat kontaminasi makanan masih cukup tinggi (oleh E. coli 65,5%) dan prevalensi penyakit diare sebanyak 116.075 kasus tahun 1995 dan Kejadian Luar Biasa (KLB) keracunan makanan juga masih tinggi yaitu 31.919 kasus tahun 1997, dengan angka kematian kasus (CFR) 0,15%. Penelitian prospektif dilakukan pada 255 buah Tempat Pengelolaan Makanan (TPM) yang terdiri dari 3 jenis TPM yaitu masing-masing sebanyak 85 buah TPM dari jenis Pedagang Kakilima, Rumah Makan dan Restoran dan Jasaboga. Makanan yang diteliti adalah makanan dari daging yang dimasak dengan air sebagai bahan penunjang pengolahan makanan (daging berkuah), dengan bakteri E. coli sebagai indikasi kontaminasi makanan. Data dianalisis dengan analisis multi variabel regresi logistik ganda untuk mengetahui faktor kontaminasi makanan. Tingkat kontaminasi makanan disajikan oleh E. coli 12,2%. Kontaminasi makanan baru matang oleh E. coli 7,5%. Kontaminasi bahan makanan oleh E. coli 40,0%. Kontaminasi air oleh E. coli 12,9%. Kontaminasi tangan pengolah oleh E. coli 12,5%. Kontaminasi pewadahan oleh E. coli 16,9%. Suhu pemasakan makanan adalah 99,5 oC dan lamanya pemasakan makanan 20,6 menit. Suhu penyimpanan 28,9 oC, lamanya penyimpanan makanan matang 409,2 menit dan suhu penyajian adalah 28,7 oC. Kontaminasi oleh E. coli pada makanan yang disajikan dipengaruhi oleh suhu pemasakan dan Jenis TPM (Pedagang Kakilima dengan resiko 3,5 kali dibandingkan dengan Jasaboga dan Restoran).

Food with its nutrient constituencies is important and needed by all biological organisms including human live. On theaters hand through food could transfer some of diseases agent that could cause gastro-intestinal disorder and food intoxication. Food contamination prevalence is still height (by E. coli 65.5%) and diarrhea cases 116.075 in 1995, food out break intoxication 31.919 occur in 1997, and with CFR 0.15%. Prospective study has been done in order to identify the E. coli food contamination rate on food serve by food establishment in South Jakarta. Sample size of 255, with 85 food establishment each type food establishment group such as street food vendor, catering, and restaurant. Meat with height water activities is used for food sample and E. coli contamination on food is used as an indicator for pathogenic bacterial food contamination. Data analysis using multiple logistic regression, to identify food contamination factors. E. coli served food contamination was 12.2%, fresh cooked food E. coli contamination was 7.5%, row food E. coli contamination was 40.0%, water contamination was 12.9%, food handler hand contamination was 12.5%, and kitchen utensil especially for cooked food container contamination was 16.9%. Cooking processing temperature was 99.5 0C, average cooking period was 20.6 minute, food storage temperature and period were 28.9 0C and 409.2 minute, and room temperature of food served was 28.7 0C. Factors involved on E. coli served food contamination were cooking temperature and street food vendor (with OR=3.5 compare with restaurant and catering)."

Metode kualitiatif menggunakan metodepengambilan data wawancara mendalam. Hasil pemeriksaan pemeriksaan menunjkkanbahwa terdapat 1 1,40 dari 72 sampel makanan yang terkontaminasi oleh bakteriStaphylococcus aureus. Sebanyak 40 orang 55,60 , 16 orang 22,20 , 24 orang 33,30 meimiliki pengetahuan, sikap, perilaku yang baik tentang personal hygienepenjamah. Perbedaan praktik higiene dan sanitasi cara pengolahan makanan yangmencolok antara penjamah makanan yang sampel makanannya negatif mengandungbakteri Staphylococcus aureus dan positif mengandung bakteri Staphylococcus aureusadalah pada tahap penanganan makanan sisa, dimana penjamah maknan yang sampelmakanannya positif mengandung bakteri Staphylococcus aureus tidak memiliki fasilitaslemari pendingin, sehingga penjamah tersebut hana menyimpan makanan sisa di suhuruangan pada saat sebelum dan sesudah dilakukannya pemanasan ulang makanan.Kata kunci: bakteri; higiene; kontaminasi makanan; sanitasi; Staphylococcus aureus

"Jajanan minuman dingin merupakan salah satu jenis jajanan ringan yang didinginkan ataupun ditambah dengan es, cukup digandrungi oleh anak-anak. Jenis jajanan ini dapat dijumpai dengan mudah di lingkungan sekitar termasuk instusi Pendidikan. Kota Depok sendiri, memiliki penduduk dengan rerata usia berada pada usia pertumbuhan. Namun salah satu permasalahan yang dihadapi setiap tahun di Kota Depok adalah gangguan kesehatan pencernaan, salah satunya penyakit Diare. Diare umumnya disebabkan oleh bakteri Escherichia coli dan umumnya menyerang individu anak usia 5-14 tahun. Anak usia pertumbuhan memiliki imun tubuh yang rentan dan masih sensitif. Penelitian ini menggunakan data sekunder dari hasil tesis saudara Nurina Vidya Ayuningtyas. Menggunakan desain studi cross sectional dengan metode observasi lapangan dan wawancara di 141 Sekolah Dasar di Kota Depok pada tahun 2019. Hasil dari penelitian ini menunjukkan sebanyak 16,2% dari 99 sampel terkontaminasi E. coli. Adapun variabel higiene sanitasi makanan yang dibandingkan menunjukkan tidak ada hubungan antara kebersihan peralatan makan dengan kontaminasi E. coli (p=0,448), tidak ada hubungan antara personal higiene penjamah dengan kontaminasi E. coli (p=0,411), tidak ada hubungan antara distribusi dan penyajian makanan dengan kontaminasi E. coli (p=5,569).

Cold drinks is one of light snack that served cold or with ice and popular among kids. This type of drinks can be found easily among community including Schools. Depok has a population where its people with average age of growth. But one of the problems that they have to faced every year is disgestive health disorders, one of which is diarrhea. This type of illness are caused by the presence of Escherichia coli (E. coli) and attack human’s disgestive and generally attacks kids aged 5-14 years old. Due to sensitive and vulnerable bodies, growth-age children are most likely infected by this bacteria. This study uses secondary data from the results of the thesis of Nurina Vidya Ayuningtyas. Using a cross sectional study design with observation and interview methods to collect the data in 141 Elementary Schools in Depok last 2019. The result of this study indicate as many as 16,2% of 99 samples were contaminated by E. coli. The food hygiene and sanitation variables that were compared showed that there was no relationship between sanitary equipments and E. coli contamination (p=0,448), there was no relationship between personal hygiene and E. coli contamination (p=0,411), there was no relationship between distribution and food serving and E. coli contamination (p=5,569)."

"Makanan merupakan salah satu aspek penting bagi kehidupan manusia. Namun, penyakit juga dapat timbul akibat kandungan yang ada dalam makanan. Tempat pariwisata merupakan salah satu tempat-tempat umum (TTU) yang berisiko sebagai tempat terjadinya penularan penyakit melalui media salah satunya adalah makanan. Penelitian ini bertujuan untuk mengetahui hubungan antara higiene sanitasi makanan dan tingkat kontaminasi Eschericia coli pada makanan di Lokawisata Baturaden. Penelitian menggunakan desain studi cross sectional. Data yang digunakan merupakan data primer yang terdiri dari hasil uji laboratorium sebesar 42 sampel makanan dan hasil wawancara dengan 42 penjamah menggunakan kuesioner. Hasil penelitian menunjukkan 95,2% tidak memenuhi syarat karena terkontaminasi oleh Eschericia coli. Analisis bivariat dengan t-test menunjukkan terdapat perbedaan yang signifikan antara kontaminasi oleh Eschericia coli dan pengetahuan penjamah terkait higiene sanitasi makanan (p-value = 0,018), sanitasi alat makan (p-value = 0,015), dan perilaku higiene penjamah (p-value = 0,032). Oleh karena itu, pedagang di Lokawisata Baturaden perlu diberikan penyuluhan terkait pengetahuan terkait higiene sanitasi makanan, disediakan wastafel beserta sabun, tempat sampah yang sesuai persyaratan, penyediaan fasilitas yang menunjang proses disinfeksi pada alat makan, menekankan proses pencucian alat makan dengan benar, menyediakan tempat penyimpanan alat makan yang terbebas dari kontaminan, menekankan para pedagang untuk membiasakan perilaku higiene yang sesuai persyaratan, serta melakukan pemantauan terus menerus agar kualitas makanan yang dijualkan tetap dalam kondisi yang baik.

Food is one of the most important aspects of human life. However, diseases can also arise from the content that exists in the food. Tourist spot is one of the public places at risk as a place of contagence through the media one of which is food. This research aims to know the relationship between hygiene food sanitation and Eschericia coli contamination level on food at Lokawisata Baturaden. Research using cross sectional study design. The data used is the primary data consisting of laboratory test results of 42 food samples and interviews with 42 food handler using questionnaires. The results showed 95.2% were not eligible because it was contaminated by Eschericia coli. Bivariate analysis with t-test indicates there are significant differences between the contamination of Eschericia coli and the knowledge related to hygiene of food sanitation (p-value = 0.018), tableware sanitation (p-value = 0.015), and hygiene behaviour The Food handler (p-value = 0.032). Therefore, merchants in Lokawisata Baturaden need to be given counseling related knowledge related to hygiene of food sanitation, supplied washers with soap, suitable bins, provision of facilities that support the process disinfection of cutlery, properly emphasizing the feeding process of the cutlery, providing contaminant-free cutlery, emphasizing traders to familiarize themselves with the appropriate hygiene behaviors, as well as conduct continuous monitoring to keep the quality of the food in good condition."
