"Penelitian ini membahas tentang pengaruh atmosfer restoran terhadap niat perilaku dengan dimediasi oleh persepsi kualitas layanan dan persepsi kualitas makanan pada restoran etnik Jepang khususnya pada restoran Ramen 1 dan restoran Gokana Ramen & Teppan. Responden penelitian ini berjumlah 200 orang yang pernah mengunjungi salah satu atau kedua restoran Ramen 1 Mall Margo City dan restoran Gokana Ramen & Teppan Dmall Depok dalam 3 bulan terakhir. Pengolahan data dalam penelitian menggunakan Structural Equation Modeling (SEM) dengan menjalankan program LISREL 8.5.
Adapun hasil penelitian menunjukkan bahwa atmosfer restoran berpengaruh positif dan signifikan terhadap persepsi kualitas layanan dan persepsi kualitas makanan. Serta persepsi kualitas layanan dan persepsi kualitas makanan berpengaruh positif dan signifikan terhadap niat perilaku. Namun, atmosfer restoran tidak berpengaruh signifikan terhadap niat perilaku.

This research aims to discusses the effect of dining atmospherics on behavioral intentions, mediated by perceptions of service quality and food quality at ethnic Japanese restaurants, especially at Ramen 1 and Gokana Ramen & Teppan restaurant. Respondents of this research of 200 people who had visited one or both of Ramen 1 and Gokana Ramen & Teppan Restaurants in the last 3 months. Data were analyzed using Structural Equation Modeling (SEM) with LISREL 8.5 software.
The results of this research showed that the dining atmospherics indicate positive and significant effect toward perceived service & food quality. In addition, perceived service & food quality have significant positive effect on behavioral intentions. As well as the perception quality of service and food, significant positive effect on behavioral intentions. But, dining atmospherics have no significant effect on behavioral intentions.

"Penelitian ini bertujuan untuk menganalisis pengaruh dari kualitas layanan dan kualitas makanan terhadap tingkat kepuasan konsumen dan tingkat loyalitas konsumen dengan dimoderasi oleh variabel atmosfer pada objek penelitian restoran Sushi-Tei. Penelitian ini menggunakan metode pengumpulan data melalui penyebaran kuesioner terhadap pengunjung Sushi-Tei dengan jumlah sampel penelitian sebanyak 162 responden. Data yang didapat diolah menggunakan metode pengolahan data hierarchical regression untuk meihat pengaruh moderasi atmosfer pada restoran etnik. Model yang digunakan dalam penelitian ini mengikuti model yang digunakan dalam penelitian Ha dan Jang (2010).
Penelitian ini memberikan hasil bahwa semakin baik kualitas makanan dan layanan yang diberikan restoran maka akan semakin tinggi pula tingkat kepuasan dan loyalitas pelanggan yang dicapai. Selain itu, penelitian ini juga memberikan hasil bahwa terdapat peran positif dari atmosfer restoran terhadap hubungan antara kualitas makanan dan layanan yang diberikan restoran dengan tingkat kepuasan dan loyalitas pelanggan yang dicapai.

This research will assess the relationship between service quality and food quality with the level of customer satisfaction and customer loyalty, while moderated by the variable of atmosphere occurring at Sushi-Tei restaurants. This research uses questionnaires as data gathering method distributed to Sushi-Tei visitors with a recorded sample size of 162 respondents. The data is processed hierarchical regression for analyzing the effect of atmospherics in ethnic restaurant. The model used in this research replicates the same model used in the previous study of Ha and Jang (2010).
The result of this research indicates that the better food and service quality provided by the restaurant, the higher level of customer satisfaction and loyalty are achieved. Moreover, this research also yields a result showing that there is a positive impact from restaurant atmosphere on the relation between food and service quality with perceived customer satisfaction and loyalty.

"Penelitian ini betujuan untuk menganalisis pengaruh service quality perception dan merchandise quality perception terhadap brand trust dan behavioral intentions pada industry Casual Dining Restaurant, yaitu pada restoran Warunk Upnormal. Penelitian ini menguji peran langsung dari service quality perception yang terdiri dari lima dimensi; tangible, reliability, responsiveness, assurance, dan empathy , dan merchandise quality perception, serta menguji peran brand trust sebagai variabel mediasi. Data dalam penelitian ini diperoleh dari 431 pelanggan Warunk Upnormal yang pernah mengunjungi dan makan di Warunk Upnormal, berusia 17-25 tahun, dan berdomisili di Jabodetabek. Data dianalisis menggunakan Structural Equation Modeling SEM dengan menggunakan Lisrel 8.80. Hasil dari penelitian ini menunjukkan bahwa: 1 service quality perception dan merchandise quality perception berpengaruh positif terhadap brand trust, 2 service quality perception and merchandise quality perception berpengaruh positif terhadap behavioral intentions, dan 3 brand trust berpengaruh positif terhadap behavioral intentions.

This research aims to analyze the effects of service quality perception and merchandise quality perception toward brand trust and behavioral intentions on Warunk Upnormal Restaurant as a casual dining restaurant. This research examine direct role of service quality perception that consist of five dimensions tangible, reliability, responsiveness, assurance, and empathy , and merchandise quality perception, and also examine the role of brand trust as mediating variable. The data were collected from 431 customer from Warunk Upnormal, that have an experience eating in Warunk Upnormal, aged 17 25 years old, and live in Jabodetabek. Data analysis was performed using structural equation modeling SEM with Lisrel 8.80. The result shows that 1 service quality perception and merchandise quality perception positively influence brand trust, 2 service quality perception and merchandise quality perception positively influence behavioral intentions, 3 brand trust positively influences behavioral intentions. "Skripsi ini membahas pengaruh kualitas pelayanan restoran terhadap kepuasan dan niat perilaku pembelian kembali melalui citra restoran dan nilai yang dirasakan pelanggan pada restoran Jepang Sushi Tei di Pusat Jakarta. Penelitian ini adalah penelitian kuantitatif dengan desain konklusif. Hasil penelitian menunjukkan bahwa untuk meningkatkan citra restoran perlu adanya pelayanan yang berkualitas, sajian makanan yang berkualitas, dan lingkungan fisik restoran yang baik dan nyaman. Sedangkan untuk mencapai nilai yang dirasakan pelanggan restoran Jepang Sushi Tei, perlu adanya kontribusi dari kualitas pelayanan yang diberikan kepada para pelanggan. Kemudian guna memperoleh tingkat kepuasan pelanggan yang tinggi, diperlukan terciptanya citra restoran yang baik. Secara akumulasi, hasil penelitian ini menunjukkan bahwa kepuasan pelanggan mempengaruhi niat perilaku pembelian kembali pelanggan restoran Jepang Sushi Tei.

The thesis discusses the impact of service quality restaurant on satisfaction and behavioral intention through the restaurant's image and customer perceived value at a Japanese restaurant Sushi Tei in Central Jakarta. This study is conclusive quantitative research design. The results showed that to improve the image of the restaurant there needs to be quality service, quality food dish, and the physical environment the restaurant was good and comfortable. Meanwhile, to achieve the customer's perception of value Japanese restaurant Sushi Tei, there needs to be the contribution of the quality of service provided to customers. Then to obtain a high level of customer satisfaction, required the creation of the image of a good restaurant. Cumulatively, these results indicate that customer satisfaction influences customer repurchase intention behavior on the Japanese restaurant Sushi Tei.

"Penelitian ini bertujuan untuk menganalisis sebuah model dari pengaruh kualitas makanan, lingkungan fisik, pelayanan terhadap citra restoran, nilai yang dipersepsikan pelanggan, kepuasan pelanggan dan intensi berperilaku pada restoran Nanny's Pavillon. Restoran ini dikenal dengan dekorasi gerainya yang memiliki tema berbeda-beda. Data yang dikumpulkan berasal dari para pelanggan yang pernah berkunjung di Nanny's Pavillon Pacific Place dengan penyebaran kuesioner. Analisis hasil uji ini menggunakan Tehnik two step approach untuk menilai hasil uji pengukuran dan struktural model.
Hasil temuan menunjukkan bahwa kualitas lingkungan fisik mempengaruhi secara signifikan terhadap citra restoran. Kemudian kualitas makanan, lingkungan fisik, pelayanan mempengaruhi secara signifikan terhadap nilai yang dipesepsikan pelanggan. Ditemukan juga bahwa citra restoran mempengaruhi secara signifikan nilai yang dipersepsikan pelanggan. Citra restoran dan nilai yang dipersepsikan pelanggan mempengaruhi kepuasan pelanggan, dan kepuasan juga mempengaruhi secara signifikan terhadap intensi berperilaku.

This research is to propose an integrated model that examines the impact of three foodservice quality (food, physical environment, and service) on restaurant image, customer perceived value, customer satisfaction, and behavioral intention at Nanny’s Pavillon. The restaurantknown had a different theme decoration in every store. Data were collected from customers Nanny’s Pavillon restaurant located in Pacific Place Jakarta via a self-administered questionnaire. Two-step approach was used to assess the measurement and structural models.
Findings structural equation modeling shows that the quality physical environment were significant determinants of restaurant image. Also, the quality of the food, physical environment and service were significant predictors of customer perceived value. The restaurant image was also found to be a significant influence of customer perceived value. In addition, the results reinforced that restaurant image and customer perceived value is indeed a significant determinant of customer satisfaction, and customer satisfaction is a significant predictor of behavioral intentions.

baru di Jakarta, yaitu konsumsi restoran kelas menengah atas khususnya pada tipe
restoran casual-dining. Penelitian ini bertujuan untuk menganalisa hubungan antara
variabel-variabel Service Qualities yaitu Physical Environment Quality, Interactional
Quality, dan Outcome Quality, serta pengaruhnya terhadap variabel Consumer
Utilitarian Attitudes Toward Brands, Consumer Hedonic Attitides Toward Brands,
dan Brand Preference dari konsumen restoran casual-dining. Penelitian ini
menggunakan sampel konsumen berusia 18-33 tahun yang pernah mengunjungi
restoran casual-dining di Jakarta dalam kurun waktu 6 (enam) bulan terakhir dengan
metode non-probability sampling. Data hasil penelitian dioleh menggunakan metode
Structural Equation Modeling. Hasil penelitian menunjukkan bahwa Physical
Environment Quality, Interactional Quality, dan Outcome Quality saling
berhubungan dan memiliki pengaruh positif satu sama lain. Kemudian, Interactional
Quality dan Outcome Quality memiliki pengaruh positif terhadap Utilitarian Attitude
dan Hedonic Attitude. Pada akhirnya, Utilitarian Attitude dan Hedonic Attitude
terbukti memiliki pengaruh positif terhadap Brand Preference.;he growth of middle-class consumers creates new lifestyle trend in Jakarta.

"ABSTRAK
Penelitian ini bertujuan untuk melihat persepsi pemuda mengenai lingkungan jasa (servicescape dan human service), kualitas makanan, harga, kepuasan dan loyalitas pemuda. Tujuan dari penelitian ini untuk mengetahui perbedaan persepsi dan menganalisis hal-hal yang menyebabkan perbedaan persepsi pada variabel servicescape, human service, kualitas makanan, harga, kepuasan dan loyalitas pada 3 (tiga) jenis restoran yaitu fine dining, food court dan fast food. Dalam penelitian ini peneliti menggunakan tes non-parametrik dengan metode uji Kruskal-Wallis. Hasil dari penelitian ini adalah terdapat perbedaan yang signifikan hasil rata-rata skor persepsi terhadap kondisi keenam variabel tersebut pada 3 (tiga) restoran yang berbeda, di mana fine dining selalu memiliki skor yang lebih tinggi.

ABSTRACT
This study aims to look at the perception of service environment (servicescape and human service), food quality, price, youth satisfaction and loyalty. The purpose of this study was to determine differences in perceptions and analyze the things that lead to different perceptions variables of servicescape , human service, food quality, price, youth satisfaction and loyalty in 3 (three) types of the restaurants, for example fine dining restaurants, food courts and fast food. In this study the researchers used a non-parametric test with Kruskal-Wallis test method. The results of this study are significant differences about the average score of perception of the condition of the six variables in the 3 (three) different types of restaurants, where fine dining has always had a higher score."

"Penelitian ini bertujuan untuk mengetahui faktor-faktor (kualitas lingkungan fisik, kualitas interaksional, kualitas hasil) yang mempengaruhi sikap utilitarian dan hedonis konsumen dalam membangun sebuah preferensi merek restoran di Magnum Cafe. Teknik analisis data yang digunakan adalah Structural Equation Model (SEM). Hasil penelitian menunjukkan kualitas lingkungan fisik memiliki pengaruh positif terhadap kualitas interaksional dan kualitas hasil, begitu pula dengan kualitas interaksional juga memiliki pengaruh positif terhadap kualitas hasil. Lalu kualitas lingkungan fisik berpengaruh positif terhadap sikap hedonis tetapi tidak memiliki pengaruh positif terhadap sikap utilitarian. Kualitas interaksional tidak memiliki pengaruh positif baik terhadap sikap utilitarian maupun sikap hedonis, sedangkan untuk kualitas hasil memiliki pengaruh positif terhadap sikap utilitarian tetapi tidak memiliki pengaruh positif terhadap sikap hedonis. Pada sikap utilitarian tidak memiliki pengaruh positif terhadap preferensi merek sedangkan sikap hedonis memiliki pengaruh positif terhadap preferensi merek.

This research is intended to identify the factors (physical environment quality, interactional quality, outcome quality) that influence utilitarian and hedonic attitudes of consumers in building a brand preference at Magnum Cafe. This research used Structural Equation Modeling (SEM) as the data analysis technique. The results show that physical environment quality have a positive influence on the interactional quality and outcome quality, as well as interactional quality also have a positive influence on outcome quality. Then physical environment quality have a positive influence on hedonic attitude but do not have a positive influence on utilitarian attitude. Interactional quality does not have a positive influence on utilitarian and hedonic attitude, whereas for the outcome quality have a positive influence on utilitarian attitude but does not have a positive influence on hedonic attitude. In the utilitarian attitude does not have a positive influence on brand preference while hedonic attitude has a positive influence on brand preference."

"Penelitian ini bertujuan untuk mengidentifikasi dining factors dalam mempengaruhi emosi positif, perceived value, dan behavioral intentions konsumen restoran Sushi Tei. Penelitian ini mengembangkan model Mehrabian-Russell dengan menambahkan food dan atmospherics authenticity untuk mengkaji bagaimana authenticity mempengaruhi behavioral intentions. Teknik sampling yang digunakan yaitu snowball sampling dan mall intercept dengan total sampel berjumlah 235 responden. Teknik analisis data yang digunakan adalah Structural Equation Model (SEM).
Hasil penelitian menunjukkan kualitas makanan memiliki pengaruh positif terhadap emosi positif dan perceived value, tetapi atmospheric authenticity hanya berpengaruh positif terhadap perceived value. Selain itu emosi positif dan perceived value memiliki pengaruh positif terhadap behavioral intentions.

This research is intended to identify how dining factors influence positive emotions, perceived value, and behavioral intentions of Sushi Tei customers. This research modified the extended Mehrabian-Russell model by adding the authenticity of food and atmospherics to examine how ethnic authenticity influences behavioral intentions. Sampling technique used snowball sampling and mall intercept with total sample are 235 respondents. This research used Structural Equation Modeling (SEM) as the data analysis technique.
The results show that food quality influences positive emotions and perceived value, but atmospheric authenticity only influences perceived value. Furthermore positive emotions and perceived value have an influence on behavioral intentions.

"Skripsi ini meneliti pengaruh dari restaurant atmospherics terhadap dining satisfaction dan behavioral intentions. Responden penelitian ini adalah masyarakat yang pernah mengunjungi restoran SKYE dan Anomali Coffee. Metode yang digunakan untuk mengolah data penelitian ini adalah regresi sederhana dan regresi ganda. Hasil penelitian ini membuktikan secara signifikan bahwa restaurant atmospherics memiliki pengaruh positif terhadap dining satisfaction dan behavioral intentions.

This research examines the effect of restaurant atmospherics on dining satisfaction and behavioral intentions. Respondents of this research come from the ones who have visited SKYE and Anomali Coffee restaurants. Methodologies used for data processing are the simple linear regression and multiple regression. The obtained result shows that restaurant atmospherics has significant effect on dining satisfaction and behavioral intentions."
